Cep mushroom confit and smoked, on violet potatoes velloute
Selection of Sardinian cured meats and cheeses, with olives and carasau bread

Scallops, Jerusalem artichokes pure and chips, with saffron lemongrass sauces

Duck terrine wrapped in wild boar ham, hazelnuts, pickled red cabbage, mix leaf

Skate wings marinated with lemon and   green apple, fresh apples, lemon gel, and walnuts

Main Courses

Squid stuffed with homemade smoked sausage on soft polenta, 
polenta chips 

 Saddle of venison, quince purée, glazed chestnuts and currant sauce

 Astice alla catalana: Shelled whole lobster, served on a finely 
hopped salad of red onions, celery, red pepper, cherry tomato, with extra virgin olive oil and orange citronette

Panfried seabass with artichokes, new potaito, blackcurrant sauce

Risotto with red cabbage, creamed with smoked butter, saffron yogurt


         Seadas (a typical Sardinian dessert):                 Large semolina ravioli, filled with a fresh and delicate melted cheese with orange and lemon zest. Once fried, it is sprinkled with honey and served nougat parfait.
